Streptococcus thermophilus DSM 24731 is a strain of S. thermophilus, a lactic acid bacterium widely used as a yogurt starter culture with a long history of use in food fermentation. Strain-specific published evidence for DSM 24731 is not available in the current literature index. S. thermophilus as a species is known to produce lactase, an enzyme involved in lactose metabolism, and has been studied as part of multi-strain probiotic formulas; however, effects attributable specifically to this designated strain cannot be characterized without direct strain-level research.
