Streptococcus thermophilus is a thermophilic lactic acid bacterium best known as a starter culture in yogurt and cheese production, where it works in symbiosis with Lactobacillus delbrueckii subsp. bulgaricus to ferment milk. It has a long history of use in food. Broader species-level research has examined its role in lactose digestion and gut microbiota diversity in the context of fermented dairy consumption, though no strain-specific clinical evidence was identified in our research index for this undesignated entry.
