Saccharomyces pastorianus is a hybrid yeast species — a natural cross between Saccharomyces cerevisiae and Saccharomyces eubayanus — responsible for lager beer fermentation and widely used in the brewing industry. It is taxonomically related to but distinct from Saccharomyces cerevisiae var. boulardii, the well-studied probiotic yeast.
