Lactobacillus delbrueckii
Lactobacillus delbrueckii is a lactic acid bacterium widely used in yogurt fermentation and industrial applications. The species comprises several subspecies (delbrueckii, bulgaricus, and lactis). Research has examined mechanisms of lactic acid production, fermentation characteristics, and viability in food matrices, as well as in vitro studies on antioxidative peptide production and physiological properties. Limited clinical research has investigated potential antifungal effects in animal models. The strain is primarily studied in fermentation science and food microbiology contexts.
